Gaspacho


Spanish Cold Soup for 8

1 1/2 pt. canned tomato juice
1 lb cucumber (1/2 or 1 large)
sugar, salt & pepper to taste
2 T olive oil
Pinch dried garlic
4 T wine vinegar
2 T red wine
parsley

Peel cucumber and cut in small pieces.
Blend it smooth with a little tomato juice.
Pour into bowl and add other ingredients.
Cover and chill.  Garnish with parsley
